Who would have thunk that 4 weeks ago that I would be standing and walking around short distances without a cane? And, for the first time in 5 years, I have absolutely no pain in my hip. Unbelievable! I even walked a 1/4 mile yesterday with my cane.
I started to prepare ribs for our Sunday family dinner. Just for the heck of it, I decided to soak them in Mad Hunky Pork Brine to see if this would make any difference in moisture retention. Tomorrow, I will pull them out of the brine and let them sit with the rub for 24 hours before putting them in the wood smoker. Then, its off to the races. Here's a picture of the trimmed ribs soaking in the brine.
I trimmed the ribs so that they would have the St Louis rib look and saved the meat on the side. I thought that I would also smoke this meat at the same time and prepare them the same way. At the end of the smoke, I thought that I would cut up these chunks of meat into cubes and put them in a tin foil container covered with BBQ Sauce and finish them this way. I could put toothpicks in them and serve them as appetizers or just place on the table for folks to pick at. Do you guys have any suggestions on what to do with these sides of meat? Would appreciate your feedback. I know that Jackson puts them on a stick or skewer and serves them up and that is also a great idea.
