That’s pretty much what I have to say when SWMBO sees me browsing Jess Pryles’ website so I figgered I’d better prove the point and make one of her recipes. Since SWMBO likes mac & cheese, I don’t really like pasta, and we had all the makings, I settled on Bacon & Hatch Green Chile Hominy Casserole (http://jesspryles.com/green-chile-hominy/).
I used up the end of last year’s Hatch green chilies (just bought, roasted, and froze my 15 lbs for this year the other day), some “store-bought” Wright’s Pepper Bacon I had in the freezer, and some dried white corn posole (hominy). My cheese blend was pretty much cheap cheddar and jack.
I soaked the hominy last night and gave it 15 minutes in the pressure cooker this morning (one cup dried posole when cooked equals just about two of those 15 ounce cans). I made everything else according to the recipe
Out of the oven (probably would have been prettier if I'd put the extra bacon on top of the cheese instead of under) ...

Plated with some Conecuh sausage I fried up out of the freezer. There was a salad out there somewhere but I didn’t think it was worth another photo.

Anyway, it was excellent, SWMBO liked it, and I’m back in good graces and can return to browsing Jess’s website. Win, win, win!
OBTW, this stuff could be the base for my next shrimp and (great big) grits experiment. Life is good and (as dee would say) just keeps getting gooder..

I haven't cooked anything with posole in quite a while. Have to give this a try when I return from my current road trip.
