Title: Is Your Favorite Steakhouse Messing With You?

I am a steak lover from way, way back and my idea of a perfect meal is a perfectly cooked steak.  Several times in my life I've had restaurant steaks that were heavenly perfection, but most of the time the chef is doing too much and is too distracted to handle the job.  My response is to cook my own, and even then I'll still mess it up now and then.  Here's an article I just ran across that brings in another problem -- anticipating failure.

Getting a steak to a perfect level of doneness is art, science, and luck.  I've got to admit, though, that I'd rather have an imperfectly cooked steak than no steak at all.  If you're into perfecting steak cookery, as I always am, here some more to ponder:

don't eat much out when wanting a steak. I've learned way too much on this site on how to cook a great steak to waste time giving my money to someone that is going to under cook a nice piece of meat.

I am my own favorite steak house..either an open fire or screaming hot cast iron...☆´¯`•.¸¸. ི♥ྀ.

It is just really difficult for me to go out to eat anything I know I can cook better myself.  Plus I really can't afford to go out to a top shelf steak house like Del Frisco's, Morton's, BLT, Sullivan's, etc. 

Keep me away from the chains, the last three or four times I eaten at one of 'em, I've left reminding myself that I'd previously told myself to stay away ! ! !

I read that article the other day and both agreed and disagreed with it. We have found over/under-cooking steak to usually depend on the type of restaurant. Our local Morton's, Wolfgang, and Ruth's Chris, for example, tend to cook to order or slightly more rare per the article. Restaurants (and cruise ship dining rooms) we frequent where steak is not the specialy tend to overcook.

At home, of course, I ALWAYS cook steaks perfectly. The only issue is not knowing what degree of doneness I wanted till I cut into the plated product.

We do not have any Sizzlers out here in Central Texas, so I just do them at the house.

We going to Florida next week. We already have it planned to go to Texas de Brazil. I know without a shadow of doubt that everything will come out a little too salty. Not sure if that is just the churrasco style.  At least with TdB, the meat they bring out on a spit usually has a gradient and you can pick on the doneness what you want to be served (at least for beef).

I very seldom have a steak when going out to eat.
I'm too much an "EL Cheapo" to go to a 3/5 star joint & the odds of getting a decent steak at a chain are about 50/50.
I reserve my steak eating experience for home where I have a bit more control over how it is cooked.  ;)

Only place I will order a steak is Morton’s, Fleming’s (occasionally), maybe RK or the like...any other is just not very good imo. At home, I tend to buy high choice or prime and a tough, 1” steak at the local chain steakhouse just doesn’t do it for me.

I have had some great steaks in restaurants but a lot of terrible ones. If I go to a new place that has good reviews I give them a chance. One chance. When I was traveling hundreds of thousand miles a year and before they got picky about expenses I ate at some of the best steakhouses in the country. I had some great steaks but also some crappy ones in 5 star restaurants.
