Fired up my GMG Davy Crockett to 235ºF using CookinPellets Premium 100% Hickory pellets. Smoked the Cornish Hens for approximately 4.5 hours until the internal temp reached 180ºF ... scrumptious results!

Oh My, can't remember the last time I had Cornish Hens. Now I want my next meal to look like that. Good Luck to me!

As for as Cornish hens go, those are perfection. They look so good had to comment twice.

I haven't cooked 'em in while, but just like a full sized chicken, you can keep them moist either by brining or by keeping a careful eye on the IT, or both ! ! !
