Title: Cold smoked nuts

I wanted to put together some Christmas goodies for some family and friends, so thought I'd give smoking nuts a try.  It was awesome to have enough room to knock out enough of everything for several goodie boxes. 

The first batch was a sweet and spicy mix.

2 Lbs salted roasted mixed nuts
1/2 cup olive oil
1/4 cup honey
2 Tb Cayenne pepper
2 Tb finely chopped rosemary
1/2 tsp Chinese five spice powder
3 Tb white sugar (to toss the nuts in once they're done smoking)

After about half an hour, we shifted them over to the hot smoke to join the locally made beef snack sticks so we could get the cheese in the cold smoker.

Ex. sharp white cheddar, mozerella, habenero white cheddar, ex sharp regular cheddar, and some colby jack

Cheese all smoked up and ready to vacuum pack!

Sausage finishing up nicely while I put the second load of cheese into the cold smoker box, and the oriental blend of nuts went on top of the sausage.

Did a total of two hours for each batch of nuts (skipped the cold smoke on the second batch of them).

The oriental mix (which wasn't AS good as the sweet/hot mix, but darn tasty!)  I wanted to experiment with using egg whites instead of all oil, as well. 

2 lbs toasted mixed nuts (salted)
1/4 cup sesame oil
3 egg whites
3 Tb Worcestershire sauce
1 Tb brown sugar

This is what happens to my helpers when they sneak too many treats during the process.  Couple of very full boys!!

Are you willing to adopt? If you keep cooking like that - you will have all of the LTBBQ members in the NW knocking on your door with belated "Trick or Treat" on their lips…. ;D

Kat your holiday snacks look great especially the nuts! That is a nice spread there, smoked cheese, sausage and nuts!
You do know if I wasn't at work now I'd be popping a cold beer after looking at your post. The way your help look in last pic tells me you must be a tough boss. Lol  ;)

One question, I'm new to cold smoking, how long do the nuts have to mellow before eating? Thanks Kat!

Thanks Hiker!   Yeah, I really crack the whip on those two, poor things...  ::)  As for letting the nuts cool off before munching, it really doesn't take too long, maybe 15 minutes in the fridge (if they're spread out) before they lose that kind of 'chewy' texture.
