Title: Semi-Traditional Potato Latkes By Way of WOW

Last week we made a traditional German potato pancake, so this week we tried a traditional latke recipe except we had no matza meal. In it's place we put panko, and to put a twist on this recipe, I added 1 & 1/2 tsp of Way Out West. They came out mighty tasty and next time I'll bump the WOW up to 2- 2 1/2 tsp. Still no apple sauce so apple butter did the trick with nary a bad remark!

Tim, I got to thinking, ( scary, I know) were the real traditional latkes fried in schmaltz?

Don, I made these using a food processor for the first time. Always hand grated before, I'm old school, but this way takes 2 minutes if your ingredients are pre-gathered. So....I'll probably be having latkes more often!

I always have mine with both sour cream and apple sauce...A bite of this - then a bite of that.... I little copped chives and lemon zest on hand as garnish

 It may surprise folks , that many cultures have a  potato "pancake" in their culinary arsenal.

Very true Tim, the Irish were not the only ethnic group kept afloat with potatoes! Just about every European region has some form of a potato dish resembling the latke.

Also like em' topped with sugar ;)

They look just like the ones my MIL makes for the high holidays.

What's really interesting is that potatoes aren't even native to Europe. It was one of the food items Columbus brought back with him from the Americas.
