Here's the thing, some of the steps might seem like an overkill but if I'm in the kitchen you're guaranteed to get the best of me in that food..

Wow! My wife (and I) love a good crab cake and these look to be over the top! Thank you for the details. Already have plans for the weekend, but these are at the top of the "to do" list for sure. Awesome.

Woke up this morning and my 7 year old daughter threatened me with violence if I didn't make the crab cakes again. Everybody in the house had sharp knives pointing at me.

So I cooked under great duress. I even made hollandaise sauce this time....



The reason I put sauce under the cakes is to preserve the crunch.

Those look OVER the top.   Lotsa work, but I'd do it.   Wife won't eat seafood, but rest of family gonna be here next month, so I'll do them for everybody else.   She and the other seafood haters can eat cheap hotdogs.   Reckon that'll convert them?   I hope.
