This takes the sub sandwich to a new high, at least as far as sub shops here in the mid states go. A couple of firemen opened up a place called
The Firehouse (go figure) and it opened here in Cedar rapids a few weeks ago. They use a lot of smoked brisket and smoked pork shoulder, and it is all smoked right on the property, out back for about 12 hours (this, from the manager....and it's in their brochure/menu, so it must be true). Seriously good eats, in fact, my wife likes their smoked brisket 'firehouse special' better than the brisket I make
so the challenge flag has been thrown....I need to smoke a whole bunch of briskets for practice, oh well.
By the way, they have a 'special recipe' siracha based sauce served on the side, it's great. I found the prices to be quite reasonable....$5.99 for a 6" or 9 bucks for a twelve (which is a buck or two less than the other sandwich shops around here.)
