I've been dying to try my hand at smoked cheese, so I figured why not put together some holiday gift baskets for the family? My plan is to include smoked cheese, smoked salt, smoked almonds and maybe smoked Chex Party Mix. Do you notice a theme here?

So on to the cheese.

A trip to Costco where I picked up some Jarlsberg (similar to Swiss, I understand), Gouda, Dubliner Irish Cheddar and some good ole Tillamook Medium Cheddar.



Sliced and ready for the smoker...



Into the Memphis for about 3 hours. I used the Amazen Tube with Lumberjack Comp Blend (Maple/Hickory/Cherry). Ambient temp was around 30 degrees F. I was worried it would be too cold, but pit temp hovered between 50 and 60.



And the final bounty...



This is a fun project. I can't wait to taste the results in about a month!

Most excellent! I've found that 60F is about the perfect temp. for smoking cheese.

That's some good looking cheese Ron!  :thumbup:

You simply can't beat Costco for cheese alright.

I bet it's gonna be fantastic, I like your other smoked items to, great gift ideas! :)
