Jamaican Style Seafood Fritters

Note: I'm re-posting this here just so it's easier to find.


This is my own Jamaican style beer batter seafood fritters.  In Jamaica usually you will see these made with Conch meat (a sea snail) or saltfish (Salted Cod) and called "Stamp and Go."

You can easily substitute crab meat or shrimp and they are equally delicious.


Jamaican Style Conch Fritters

Dry Ingredients:
2 cups flour
1 tsp. baking powder
1 TBS. sugar.
1/2 tsp Thyme
1 tsp salt.
1/2 tsp. Ground Allspice or Nutmeg
1/2 tsp. Paprika
1/4 tsp. ground red pepper


Wet Ingredients:
1 lb. Conch Meat (you can substitute, cod, shrimp, crab, etc.)
2 - 3 scallions finely chopped.
1 roasted red pepper diced (about 1/2 cup)
1 egg beaten
3/4 cup (6 oz.) Beer
1/2 Scotch Bonnet (or Habanero) Pepper seeded (optional)

Mix the dry ingredients together in a bowl. In a separate bowl mix the wet ingredients. Combine the two & mix into a stiff batter. If the batter seems too loose, add a little more flour if needed. Use a scoop or teaspoon to drop the batter into hot oil and fry until golden brown.



You can keep them round & deep fry (like I did here), or flatten into patty shape & fry in shallow oil (like I did above), whichever you prefer.
