How to cut a butt in half?

We have heard that it is a good idea to cut a butt in half because it gives more surface area for bark and reduces cooking time.  My question is, how do you cut a butt in half with that big bone in the middle?  Dee

In a big butt ( the type you get in the vacu pak), the bone extends about 1/2 into the meat.
I simply cut immediately behind the bone producing a bone in & boneless butt about the same size

I would think those two roasts will not cook the same though. Bone intakes more time.

A hacksaw works. Try not to use one that has been cutting too much wood.

I buy boneless butts at Cash & Carry and/or Costco and then - well, you know the answer!!  :D  :D  ... But when buying a butt with the bone in at a grocery store I ask the guy behind the meat counter (not sure they're actually Butchers!?) if they can cut it in half for me.  They've always tossed it on the band saw ... zip - zap!!  8)

Ahhhh, so you are cutting horizonal rather than vertical.  That makes sense.  My Daddy used to do alot of bbq'ing and used to do some butts over the open pit he built in the back yard.  A few years before he died in 1970 he started to cut the butts into 2'' or so thick strips and smoke them that way.  He said they tasted just as good and took less time.  Dee
