Brisket

2.5lb brisket on low. Rubbed with mustard and Jan's Rub. Got a cherry smoke going good by putting some in the bottom of the barrel as well as the basket. I'm thinking 2-3hrs.

Was cooking way too fast on low (got to almost 400°) even with lid up. Was at 150 within an hr. Adjusted to this set up. Now is registering 250° with lid down.

Final product. 2.5hrs to 190°. Came out amazing!

Yes sir looks great.   I have cooked a brisket in my SRG and worked well but yours looks bettered

Thank you TMB! Ihad to watch it constantly as the temp ran over r400 some times. I finally placed the brisket on the griddle on top of the grill and alternated top up and down. I flipped it 1x to crisp the topside as well. Pulled it at 190° and let it rest a bit. It was a bit dryer than I'm used to but flavor was excellent. Left overs today were even more moist!
