Simple Wednesday Night Pork Chops

I have been prepping most of the day for tomorrow’s cooks.  I didn’t want to do anything fancy tonight
so I went simple with pork chops.  My wife’s chop was seasoned with Sweet Rub O’Mine and I used my
go to rub Jallelujah Bacon Jalapeno.

I fired up the Grid Iron with Sugar Maple and set it for 235.  Once it was up to temp I put the chops on.

Chops are done at 140 internal.

Plated with boxed Au Gratin potatoes.  A simply delicious and quick meal.

I think I am pretty much ready for tomorrow.  I have 2 co-workers who asked me to smoke their turkeys
for them.  Normally I would just put both on my WSM and go for it.  Well, both asked for charcoal and one
wanted pecan smoked and the other apple smoked, so will use my WSM and my Performer.  I am also
cooking our turkey and ham on my Grid Iron.  So we will see how it goes.  Thankfully I have 2 Maverick 732’s
and my Grid Iron has a meat probe. I really enjoy doing things like this for my co-workers and family so
here we go!
