I trimmed, rubbed and tied it up last night. Now it is hanging out in the barrel with 2 chucks of Hickory, and the wait begins. :P

I'm really interested in your results. Are you monitoring the PBC temperatures? If so, what's it running at?

I am sitting around 250 today. I had to move it to the grate because the hooks were pulling out. I will wrap it when I get home. Yup I set it up and leave it all alone. That's one of the great things about it

Wrapping it at about 160 degrees. The barrel cooled down a little, down to 230 and coals are getting a little low. Normally at this stage, its still strong around 260. Every fire and piece of meat is different though. Here is the before pic and a progress shot.

It finished at 3 at and I pulled it apart at 4. Total cook time was 7.5 hrs, then a 1 hr rest. We had an hour of hard rain, and the barrel didn't miss a beat. The thing just kept on chugging along. It pulled great, I added a little more rub while pulling. It came out good, a bit on the soft side of things though. All in all, I am pleased with it and so was the wife and kid. Have enough to bring to a family get together to tomorrow, and even froze a pound. Thanks for watching
