Beef Short Ribs

another attempt at beef short ribs. put them on the grate for 90 minutes, placed them in a pan with a little bit of liquid and foiled it closed and placed back on the grate. 45 mins later pulled them from the pan and back on the grate with some sauce. Pulled them at the 3 hour mark. These were probably the best ones I've done yet. I might let them go another 15 minutes in the pan but what fat that remained in the ribs melted like butter in your mouth, they were darn tasty.

nice job kona, ive done boneless short ribs from costco and i didn't do them right as they were quite chewy and tough.  since then i never tried them again, just curious what temps you were running in the barrel and did you monitor temps of the meat when you took them out?  someone later on told me to treat them like brisket.
