Title: The Best Thing You Ever Ate . . .

I've got an "anything but" competition coming up next month and I'm trying to gather ideas.  "Anything But" in BBQ competition means the entry cannot be one of our standard four (chicken, ribs, butt, brisket) and dessert is another category that I'm not cooking so my entry needs to be something killer tasty that isn't competition barbeque or dessert. 

The rules are pretty lax so I can do some prep and even pre-cooking at home but in the spirit of the event I'm going to do as much of the cook as possible on site using my pellet cookers, a gas hotplate and a small deep fryer. 

Given the limitations  I've listed, what would make a good entry based on your tastebuds and what you like to see when you're really trying to please yourself?  The more ideas the better  ;D

I'm going with a Breaded Steak casserole.    Different than anything and cooked on the grill really kicks up the flavor.

Crab, lobster, clams, oysters, rainbow trout, salmon...

I ate my weight in Lobster @ the Rio All You Can Eat buffet in Las Vegas. Will never forget it. I know those black mountains around Vegas are leftover seafood shells.  LOL  .☆´¯`•.¸¸. ི♥ྀ.

Cold smoked scallops, wrapped in bacon, - finish cooking in your pellet grill and then topped with a a combination of browned butter, white wine and some capers, and black pepper. :)

Some good ideas and concepts are stacking up.  The judging of this category has no rules so it is going to have to be something with really wide appeal.  So far I've rejected limburger coated livermush with pineapple aioli and rent-a-peas but I'm still looking  ::)

Not sure this is right for your cook-off, but the very best thing I ever ate was in a small posada in Brazil. We had fresh grilled lobster over a live fire - nothing fancy - just lobster and fire. Along with that were anchovies - but not your tinned anchovies. These were 12 to 18 inches long, grilled whole. Again, very simple - fish and fire. It might have had something to do with the caipirinhas, but ohhhh boy that was the best meal I have to date.

My wife and I went to an extremely fancy restaurant for our anniversary a few years ago in St. Louis. I'm talking suit and tie fancy, lol. I really wasn't expecting the food to be that great, just overpriced. I saw something interesting on the menu. It was a caramel apple porkchop. It was over 2 inches thick and is the still the best thing I've ever eaten to this day. Every bite was both savory and sweet. I would drive to St Louis again just for that porkchop.

Well, I won't do it justice but it didn't have any actual apples on it like other porkchop and apple dishes I've seen so it had to have been marinated/cooked in an apple juice or reduction. The caramel flavor came from a glaze of some sort. My wife and I swore it tasted just like a Wethers caramel candy. Almost like they melted some werthers in the kitchen and drizzled it over the porkchop. The meat itself had a strong hickory smoked flavor. It was all pretty intense together.
