I decided to make some potato, leek, ham soup tonight. I kinda remembered that someone had a recipe on here, but decided to just wing it for tonight - we had a softball game, and other commitments... so, needed to get it done. I had some retained double smoked ham that needed to be used, along with some leeks an green onions that were screaming to get in a pot.
So, real simple - sautéed the leeks (in a bunch of unsalted butter), added a bit (very little because the ham is VERY salty) of salt to get them sweating. Tossed in three diced russets - just cleaned - not peeled (I really like the jackets.) Let them get friendly for a few minutes and added a box of chicken stock - brought to a boil. As it boiled I added some fresh ground pepper, a bit of basil and chives. Then turned down the heat to a slow simmer, covered and let it go for about 30 minutes or so.
When the taters were soft, I looked for my immersion blender - I found the stick part, but not the top - another casualty from SWMBO's passion to clean out my kitchen... ??? ??? ??? ???
So, brought the pot to the blender and in batches made it all smoothish.
Back in the pot, added the ham and a couple cups of cream (1/2 & 1/2) Let it warm back up and ladled into bowls. Tossed some chopped green onions over the top and called it dinner.
Rocky had three bowls and her BF almost finished the rest - glad I grabbed mine early.
So, here is the funny part. I came back on line to find out where I found this to give proper credit - I found a link to a video I did in 2013 for this soup (a bit different - might have to try that one again... ;) ;D ;D) I am sure there are others and I appreciate and thank you for your inspiration. I just found it funny to find my own video that I had forgotten about! What a hoot!

Sounds delicious David. My wife does a good potato leek soup, she loves potato soup in many ways. She doesn't put meat in hers so I have to fix me a pork chop or something.

Ken, It s hard to beat taters and leeks. You can play with herbs or meats - but the basic pairing is perfect.

It sounds wonderful. Every time I eat home made soup I take a trip down memory lane. I was practically raised on soup.

That is a good one! Your "new" version sounds really good. I will be bookmarking this one for colder weather.

Gosh, Don - I forgot the first one, but the video looked good. Anyway, this one was very good and I am looking forward to the retained cups tomorrow!

That was my first experiment with the GoPro camera - need to dust that off again too.
