I was at Sams Friday and found:
Pork Lion Chops
Country Style Ribs
Crosscut Beef Short Ribs (don't know what else to call 'em)
So, I brined the the chops Friday night. Saturday, I air dried the cops in the fridge and rubbed down the Country Style and Short Ribs. I used a mix of Smoking Guns and Cimarron Docs on the pork and The Most Powerful Stuff on the beef.

The pork went Fat Boy first, at about 2:00. Chops on top and the "ribs" on the lower rack.

Even running ar 225º, the chops only took an hour to get ot 145º, so they came of to rest until closer to dinner time. Then they'll go on the GrillGrates for a little color.
The Short Ribs went on next.

We still have ways to go. Gotta bake a few potatoes, grill some asparagus, etc.

Very nice... the short ribs cut that way are called flanken cut (often used for Korean short ribs). They are fantastic smoked or grilled IMO.

Hmmm... Crosscut beef ribs - Korean style. Next time I get some from the butcher I think I'll have him cut 'em that way.

Yes, they're done. My daughter, SIL, and grandkids didn't leave until 11:00. Then, I actually had to be at work by 8:30 this morning. Finally got home, so here it goes . . . .
The short ribs came off and made a nice little snack:

The I started up the Kettle with GrillGrates. The potatoes were microwaved for 10 minutes, then the skins covered butter and salt to finish on the grill. The asparagus is simply EVOO, salt, pepper, & garlic:

Got the asparagus off and seared off the chops, smothered in Stubb's Sweet Heat:

Oh, the Country Style Ribs stayed on until about 10:00. They were brushed with a combination of some Eastern Style Sauce (store brand), pure maple syrup, and a little Scott's. Those got packed up to bring to an elderly friend of mine who is recuperating after a fall and broken bone.
