New member here from Fargo, ND. Stumbled upon this site while researching pellet grills. Thanks to all who have experience with and have commented on Rec Tec. My new "kitchen sink" bundle will arrive Friday!
I am not a huge forum user, but something (my desire to make ribs that are edible) drew me to this site and to learn more. I have always loved smoked meats, dating back to my dad's retrofitted freezer in the backyard. I am excited to start up with my Rec Tec and see what it can do. I nearly dropped $4k on a natural gas table top pizza oven (yes, i also have a weakness for pizza), but I hope some additional research here will keep me from doing so.
Hope everyone has a relaxing Monday!

Welcome from North Carolina.
Give the Uuni 2 a serious look for pizza. Since you already have the correct "fuel" for your Rec Tec, you will be able to use it with the Uuni 2. The price of the Uuni is another big plus. Check some of the Uuni posts on the forum. Two of the forum members cooked a lot of pizza at the Fall Gathering a year ago. I was one of them. Brad Czajka was the other one. He is an Executive Chef in Atlanta. The two of us had a lot of fun that day.

Here's another NC welcome. We have a large contingent of pellet cooker drivers here so don't be bashful about jumping in. Learning the ins and outs of pellet cookery is fun but is a process -- you'll need to adapt your recipes and approaches from other fuels. See my articles here if you want to avoid some of the more common mistakes. http://www.letstalkbbq.com/index.php?topic=2641.0

Our resident expert is muebe. He helped me "tune" my Uuni to get the best performance when I first fired it up. There are some dough recipes posted here that are perfect for making thin crust pizza on the Uuni. Check out some of muebe's posts about other ways to use that high heat oven. It is a great addition at a great price to add to your "cooking arsenal".

In Fargo, NDSU rules the roost (4-peat football champs). I am a devout UND fan, despite attending Saint John's U (Collegeville, MN) and U Of MN.
