Hi, RJ from Spartanburg, SC here. I'm a KCBS judge but mainly just like feeding friends good outdoor food. I'm down to an electric smoker and Weber gasser now.

RJ, Welcome. It seems there is a cabal of good cookers forming in northern SC. Let me change that because the word "northern" and SC do not go well together. Let us say Upper South Carolina. Dee

It is called the Upstate Area Dee. SC has 3 area's Low Country (the coast) Midlands (well duh) and The one and only Upstate Area. Also each has their own sauce taste in BBQ sorta like Eastern NC and Western NC. The Low Country is a mustard based vinegar sauce, Midlands is a tomato based vinegar and the Upstate has both and some thicker tomato style sauces

I'm a fan of the memphis/texas style sauces foremost but I do make a mustard sauce from scratch that I like a lot.

Nice! Glad to see a local yokel. I've got some friends that like to tinker, or 'play with fire' as we say. I'll be sure and let you know when we get together again.
