Title: Texas mini BBQ Crawl
Post by: RG on May 12, 2016, 06:53:39 AM
Well folks, the time is here. I am loading up to head to Texas to eat a few BBQ joints with a stop along the way to see Cajunate in New Orleans and have a Po'Boy :) Should be fun, I'll try and take a few pics along the way.

Where are you heading to?  I am in the DFW Metroplex and am very familiar with the Austin/Lockhart stuff as well.

IR2DUM took me and a friend on the "crawl" a couple of years ago.  The places we visited we very friendly and each took us to the pit area and let us look around and take pictures.
We ate at the first 3 places, but after that, we couldn't eat another thing till mid-afternoon.
Prepare to be amazed!
Be sure to check out the wood piles at Smitty's  and Kreuz.
I was also surprised at the size of Lockhart...there are 3 famous places there in that small town.

Oh yeah, your gonna have a great time.
I think I would skip N. O. Just to have an extra day for the "crawl".

just sayin'...

They were sold out of everything except chopped beef (brisket) sandwiches and sausage by the time I got there.  I got a sammich a piece for the wife and I and we shared a sausage link. $24.00

RG, maybe I am 2dum, but I didn't read where those pics of that que were from. I would venture to guess that you're not yet in Texas. I'm just guessing this because of the elegant plastic placemat/plate. In Texas, our everyday dinner plate is just brown butcher paper. If it is a formal dinner, we use white butcher paper. That chopped beef and sausage does look good.

Do you have an idea of your itinerary in Texas? What bbq joints are you thinking of hitting? Are you going to be anywhere close to Houston? By the way, like muebe said, anywhere within 200 miles is close in Texas.

I would venture to guess that you're not yet in Texas.

The sausage looks Texan but not so sure about the fancy hamburger bun and the side of sauce (and, as IR2dum says, the fancy wrapping). All looks really edible though.

Post by: RG on May 14, 2016, 07:57:22 AM
Sorry guys, I was a tad "shot out" when I  posted that. The food was from LA Barbecue in Austin. It was wrapped in plastic wrap then wrapped in pink butcher paper. It was a to-go order. On a side note, I'll never complain about Atlanta traffic OR roads again. Texas traffic blows and the roads suck, lol. I guess traffic is just a universal problem. It sucked in Louisiana too, especially in New Orleans. Canal Street is nuts!

Back to the grub, the sauce was thrown in the bag so I used it,  the wife did not.  It was some good tasting stuff but I am one of those people who like sauce on bbq and on steak (oh my!). Save your comments about if it needs sauce then it's not good.  Not true.

Today is Franklin's, I will be there early so I can make sure to get some brisket ;D

Post by: RG on May 14, 2016, 05:41:41 PM
We got there at 8:15 after ALMOST not going at all!  We got up a little before 7 and went down to eat our hotel breakfast. I ate half of a Belgian waffle and drank a chocolate milk (yeah.....it's a 5 year olds breakfast) and when we got back to the room I googled directions to Franklin BBQ and Google said they were closed Sat & Sun! I about lost it, lol. I told my wife that it must be an error and that I didn't drive 20 hours to NOT eat there! So we loaded up and went and by the time we parked and got there, they were indeed open and there were at least 150-200 ahead of us.

There is a girl that comes around asking what you plan to order and she'll tell you what they can't guarantee. By the time she got to us,  pulled pork was not looking like it would be there still so we decided to order 1/4 pound turkey, 1.5 brisket (half lean, half fatty), 1 sausage link and 1 Beef rib. The beef rib wasn't part of the original equation but Mrs. RG wanted one. The girl said they only serve them on Saturday so we lucked up! She also said they average about 1 pound.

We made it into the building at about 12:30 and ordered at about 10 til 1:00. They still had pulled pork so we got 1/4 pound of that just to try it and on the way in we saw a dude eating pork ribs and they looked great so we added 2 bones (he gave us 3). So we ended up with a sample of every meat they have, lol. That 1 pound beef rib turned out to be 2.2 pounds! $46.00 for that alone!

We got up to the register and it came to $106!  After we got back to the hotel, I saw that she didn't even charge us for the pulled pork so it seems like I saved about 4 bucks :)

The brisket is super intensely beefy. Very moist and tender. Every morsel. The lean and the fatty were brisket perfection. Nice bark, very peppery. The beef rib, same deal. The pork ribs were fantastic as was the turkey. The pulled pork was moist but really peppery, I liked it but was glad I only got 1/4 pound.  The sausage was not as good as LA BBQ.

Overall, it was killer! That is how brisket is done! We ordered no sides, only bread. The sauces were good, I tried all 3 but really liked the espresso sauce.

I left out of there in pain and wishing I hadn't eaten so much.  We brought about 1/2 of it back to the room.

Looks and sounds like a great feed but as much as I love brisket and most other types of BBQ I'm not so sure I'd stand in line for 5 or 6 hours to buy an order from anybody. Maybe for some "quality time" with Ann Margret, Michelle Pfeiffer, Ellen Barkin, and/or Sharon Stone in their (our) prime but for BBQ? Maybe. Maybe not. I guess I'm not as addicted as I thought.

It's part of the experience. It's cool to talk to all of the people around you,  everyone is from somewhere different. The food was worth the wait,  trust me on that.  I am not one to wait,  I don't have the patience but talking, taking pics, watching guys play beer pong.....it went by pretty quickly.

Are you going anywhere else?

B T W, you really should get Franklin's book, "A Meat-Smoking Manifesto", just to read his life story. The rest of it is about building and maintaining a good fire in your smoker and how to smoke meat. (that part is good, too)

I hope y'all get to go to LockHart.

Hey Jack, I have that book.  Good read! As for bbq travels, that will be it I am afraid.  We were planning on hitting the Salt Lick but neither my wife or I can take anymore 'cue and dare I say it may be a while before I even make any myself, lol.

I've eaten these places on my travels so far :

Day one : Bacon Cheese Burger for lunch at a dive bar somewhere in Alabama at a joint called Butch Cassidy's
Po Boys and gumbo with Cajunate at Parkway Bakery in Nola

Day two : "Breakfast" at the Hyatt in New Orleans
Muffuletta from Central Grocery that Caj brought us for lunch
LA BBQ for dinner

Day three : Very light breakfast at Residence Inn in Austin
Franklin BBQ for lunch (with leftovers still on ice, lol)
Slice of pepperoni pizza and Voodoo Doughnuts for dinner

Day four : Nasty breakfast again from the hotel
In-N-Out burgers for lunch on the way to San Antonio
Dinner was a burrito as big as my head, brought leftovers back to the room that will be thrown away.

Today will be breakfast at Drury Inn before we leave to head back to New Orleans
Lunch to be determined.

At this point, I am thoroughly disgusted with any and all food. My stomach hates me and I am miserable, lol.

So......no Lockhart, no nothing closely at all related to bbq. I will do well to ever eat again after this trip  :P

Wondering what makes Franklins BBQ so good?

Salt and Pepper rub...we can all do that

Uses a pit with logs of wood......we can all do that

Is it the grade of the briskie that sets it over the top??

Rumor has it that Franklin spritzes with pickle juice during the cook. We don't do that.

... and you were doing so well.  Man up! (or "Cowboy up!" since this is mostly Texas-related). There's NEVER a reason to skip Lockhart when you're within driving distance (unless maybe there's a death in the family and it's you). Settle down boys, it was never my intention to go to Lockhart. The primary spot was always Franklin BBQ. I figured on eating at 3 places. LA Barbecue, Franklin and The Salt Lick. Ate 2 and that was enough. My daughter is VEGAN so we had to find food for her too, not an easy task, lol.

Maybe there will be another trip where I can hit 2 or 3 more. If it were a scenario where I had flown in, that would have given me far more time but driving left me only so much time to be in one place.

That's why I called this a mini bbq crawl  ;D

By the time we got to Austin, Franklin's was closed...
It was a trade off - go to Franklin's or go to Lockhart.
six of one - half-dozen of the other as they say here in the South.

Franklin's is still on my bucket list.

Alright folks, as luck would have it, I did have it in me to eat some more 'cue after all :P

On the way back, traveling through Mississippi I saw a sign for "The Shed" so after discussing with the wife we decided to give it a whirl. I had watched their TV show and always wanted to give it a shot. They named this place appropriately, I felt like we were eating in a junk yard! It is just a bunch of rickety buildings kind of just strewn about the place. The bathrooms are not even in the main "structure". The floor in the dining area is the same as the parking lot, GRAVEL, lol!! I played it safe and went with a pulled pork plate with Mac and Baked beans for my sides. My wife, still thinking about Franklin's Brisket, ordered the brisket plate. They serve everything sauced, not a big deal for me as I like sauce (we've covered that already, lol) but my Wife is not one to eat sauce on BBQ and if she does, it's only on ribs if I put MY sauce on it, pulled pork can only have a vinegar based sauce and for brisket, ONLY a little on burnt ends, NEVER EVER on slices. She ate it anyway, I tasted a small piece and right away I noticed they sliced it wrong! It was stringy like pot roast. They had sliced it WITH the grain, a BIG no no. It was tender but was severely lacking smoke and was bland. It actually NEEDED the sauce. My pork was decent. Not great, not bad....middle of the road I guess. It too was sauced. It had enough smoke but wasn't the moistest stuff I've had. The sides, in typical BBQ fashion, were nothing special. I am going to get on my soapbox for a sec here. I know that NO ONE ever goes to a BBQ joint for the sides BUT my logic is that if you care enough about what you're doing, make some sides that are better than the next guy. Make them spectacular! Every 'cue joint I've eaten at that has had better than average sides, always had great 'cue as well. The mac was ok, but it was a velveeta type of deal, fake cheese sauce instead of the real deal. The beans were doctored up bush's. Not the end of the world, but a missed opportunity I'd say. Would I eat there again? Maybe. I'd get chicken or ribs though, those might be better.

The day after eating at Franklin, we went to San Antonio and stayed in a hotel on the river at The Riverwalk. A VERY cool and hip place. We walked right out of the hotel and went up and down the river, sight seeing, ate a little ice cream at Ben & Jerry's and scouted out our dinner options. We ended up eating at a Mexican joint as I posted earlier.

2 single scoop cups of ice cream - $12!!

Cool boat tours. $10 a person, we passed as I needed the exercise after all of the grub I had been chowing on
(http://www.tpdatlanta.com/vac/boat.jpg)

This burrito had beef (chuck roast type), rice and beans. Covered in "Ranchero" sauce and cheese. It had to have weighed close to 2 pounds.

Once back in Nola, we ate a place right down from the hotel Astor where we stayed called The Creole House. It was supposed to be good but I found it to be just okay and WAY overpriced!

I got Shrimp & Grits

Cool, please do! The hype about Franklin.....believe it. It's true.

Wondering what makes Franklins BBQ so good?

Salt and Pepper rub...we can all do that

Uses a pit with logs of wood......we can all do that

Is it the grade of the briskie that sets it over the top??

Well, I know that he uses some kick azz meat for starters. I also have heard tell of The Turtle cooking a SRF brisket and one of the other members (IR2DUM??) cooking a select HEB brisket side by side at one of the get togethers and it was no better than a select HEB brisket but I'll tell you this much, it has just as much if not MORE to do with the cook and the cooker than what's being cooked. Briskets cooked on a Rec-Tec (no offense intended to them nor anyone that owns one) is NOT going to taste like one done on a proper reverse flow big azz big time stick burner like Aaron uses. Period. I have made some very good briskets on my Kegs and Smokin-It but it was not on the same level as what I ate at Franklin. If Franklin is 10, mine which I used to rank as maybe an 8 or 9 on my good days have now become a 6. Kind of a bummer but also glad that Franklin BBQ lived up to its reputation as I would have hated to drive over 2100 miles round trip to eat what I can make at home :)

Wish I had seen this sooner I would have come down to Austin a day early and met up with you guys. Austin is weird enough that we could have found lots of Vegan fare for your daughter as well. Glad you got to enjoy some good que though.

Thanks, it was the thought that counts! Maybe next time ;)

... San Antonio ... Riverwalk ... Ben & Jerry's ...
Right under Ben & Jerry's is a restaurant called Paesano's. I think it's a (relatively) new location (I haven't been there since my mom moved back to Hawaii in the late 90s) but they used to be the best Italian place in San Antonio. Their Shrimp Paesano was worth whatever they wanted to charge for it.

Once back in Nola, we ate a place ... called The Creole House. It was supposed to be good but I found it to be just okay and WAY overpriced!

Well, that's not surprising. If you looked closely at the sign you would have seen that it was a "slip cover" over the sign of the restaurant it replaced sometime in the last year. If you'd looked even closer, you'd have seen that the old sign was "Arby's" (You can just see the red Arby's hat brim under the "B" in "Bar" in your photo). Well at least you didn't try a Lucky Dog.

I supplied the SRF brisket but dee's SIL (a professional chef) smoked it before I got there. I don't know what cooker he used but it was possibly the best brisket I've ever eaten. I probably wouldn't (and haven't yet) paid that much very often. I made burnt ends out of the point and they, too, were excellent (but burnt ends are pretty easy to make). I don't remember a HEB brisket at the time (but I was jet lagged - TMS&ISTI).

Here's video to refresh Turtle's memory.
00:15  Brad (Dee's SIL) preparing Turtles SRF Prime brisket. He smoked it in Dee's Masterbuilt.
26:18  Turtle working on his burnt ends. Not sure what he smoked them on.
43:53  HEB select brisket which was smoked on the RecTec.

Ah! Video is always good for reminding us of our past, lol. My whole point is that I DO think that meat is a big part of it and that the cooker (person and device) make up the other part. Aaron Franklin himself could not make what he makes on a Rec Tec or a MES (but it would still be damn good!) :P

Jason, I hate to tell this but I live here and never heard of the Creole House. Lol.........

Not really, but I haven't heard anything about it. That shrimp and grits looks terrible. I wish I had known you were looking for someplace to eat. I probably wouldn't have gone. Been nursing a smashed hand. Not that I'd expect anyone to really catch it but in the Making a Medium Jambalaya post when I started cooking on site I had some unwanted help arrive. Well, when it was done I had to roll this like 18 gallon cast iron pot in a steel burner setup a good hundred yards and so I decided to go through the school building. As I'm rolling the pot and just getting to a double doorway that helper appears againg and say "Here, I'll help you with that and." And before I can say "No, I got it!" He grabs a handle and jerks on it and causes the rig to turn right into the corner of a BIG thick wooden door. One with nice sharp 90 degree corners. Lol..... My left ring finger jams right on that corner. I saw stars!!!!! I had to run and run it under cold water and grab a rag to cover the bloody mess. Good thing all of the cooking was done. It's a lil better today, swelling is going down but still hurts like hell. I know he meant well but next time I do something like this I'm doing it secretly. Lol.....................

Anyway, I'm sorry to tell you but that's about what it cost for two to eat down there and sometimes more.

The cost wasn't the problem so much as what I got in return for said $$$ spent, lol. That meal should've been about $40.00 on the high side IMHO.

Oh well, when in Rome! Glad it's over, good to be home for sure. I enjoyed the trip minus the traffic :)

Jason, I hate to tell this but I live here and never heard of the Creole House.

I wasn't making that stuff up - it's the former Arby's on the corner of Canal & Decatur. I checked it out when we were there last month and quickly made the call to pass it by. Apparently I was far happier with my decision than RG was with his.

I am still learning when you're being sarcastic and when you're serious, lol. After going back and looking at that picture, I can see the dang bottom of the Arby's logo :P

That's crazy though, that place doesn't look anything at all like it used to be an Arby's on the inside. It's huge to boot! We ate there because there were a ton of great reviews online, people were raving about their Shrimp & Grits. My Son makes Shrimp & Grits that BLOW those out of the water. So much for eating authentic Creole food I guess, it was a bummer :(

I took a butt load of pictures, shared some, kept a lot out of the "share" pile. Here's one I meant to post.

I've never seen a Travel Center before that sold smokers and fire pits. This was but a wee sample of what they had!

Also, I like this picture. Taken while driving in the rain over a bridge. It would make a good desktop wallpaper I think.

IR2DUM took us to Buc-ees as part of our bbq crawl.
Everything really IS bigger in Texas!
The biggest truck stops around here can't compare to that place!

just sayin'...

Buc-ees is known for their clean, fancy, elegant, modern rest rooms. I have only seen one rest room that is fancier than Buc-ees and it is in Branson, MO at the Shoji Tabuchi Theater. Everything is gold plated and it has a wood fired fireplace and billiard table in it. The first time I saw it, I forgot that I had to go.
