Long time griller, just dying to get a Yoder YS 640.  Sometime in the very near future will pull the trigger.  This looks like an excellent resource to learn and share.  Thanks for all your posts.

Wow, HUB, I just read both of the articles, you so kindly placed links to.  Absolutely perfect and very timely.  Thanks to all of you for your kind comments and most of all, suggesting I take more time.  Consider it done.

The biggest question I'm pondering now,is, "what the heck do I really want to do"?  I like the smoky flavor, but truthfully, my "smeller" and sense of taste is not the best.  I have a Weber Baby Q, Chargriller 5050 Gasser, Charcoal, Firebox smoker combo and love it. I also built one of the Weber Smoky Joe mini-smokers that's so popular now.  It works great, but not big enough for several racks of Ribs, or a Butt, and you still have to TEND IT.  I'm way tired of having to tend everything so much for the big cooks.  I have a 6 Inch A-Maze-N Smoker tube and really like the smoke it produces over a couple of hours.  I have a sawdust tray smoke generator, but didn't find it gave as much smoke as the tube.  I want to get the 12 inch tube for sure, and maybe their Pellet Tray, regardless of what Grill / Smoker I end up buying. 

I have a lot of experience with Gas grills, and quite a bit with the Chargriller Combo, but overall, I'm just tired of the tending bit.  I think I've just helped myself answer my own question.  Hmmmmmm...  Of course, with all your help and input. 

Great articles, Hub, and thanks to all of you, again.  I'll post what I end up doing. It may be after the first of the year, but I'll get there.  At least add one more item to my "Herd".  I like that term.
