Title: Do I re-bag
Post by: GusRobin on August 06, 2017, 11:40:50 AM
I have pork belly that I am making pancetta. I sealed it on 6/14/17  and it weighed 95.4 oz. Today (8/6/17) it weighs 81.8 oz . Per the instructions I read, I should let it get it to ~66 oz. (30% reduction) . The meat has shrunk, the bag is loose. Should I open it and re-bag it with a new bag. Any recommendations?

Let it go, normal for the bag to not completely bond to the meat after the meat is loosing liquid.

Ok thanks I was concerned as the bg is very loose. Since it has been almost 2 months and only ~16% weight loss - do I just wait until it loses 30% regardless of the time it takes?

Yeah let it go, squeeze the middle, if its mushy its not yet done, needs to feel firm some. do flip it over once in while so it dont get slimy.

If you see this video, the bag is completely loose when the meat is taken out.
