Today I was watching a guy smoke some meat in his kamado. He wrapped each chunk of wood in a single sheet of foil and then placed it on the coal pile. He said that the the foil wrap keeps the wood from flaming out and they give off much more smoke.
I'm just a backyard jack and have never heard of such, but I can tell you that I'm gonna be trying it next time I cook.

Never have tried that Jack. I am not a fan of Aluminum foil in a direct heat application. But - I think the idea of preventing the wood from igniting is good.

It's essentially a cheap man's smoker box and, being a cheap man, I've done it with chips (no, I didn't wrap each individual chip) and gotten decent results.

I'm with Tee, which pains me. Heating aluminum has to give off something that can't be good for us. My wife has been having weird medical issues. And has done a lot of research. And don't get her going on heating things in plastic.

I've done this more times than I can count with chips and pellets. Never worried about it with chunks, but the principle is the same.
And you poke one single small hole in the foil, when doing this with chips/pellets. I also have a small cast iron smoker box, from BBQer's Delight which does essentially the same thing.
