Title: Memorial Day Cook 2013

We are starting a day early so my daughter and her boyfriend can make it.
   
It’s been awhile, so this cook is going on the Double-chef (Fatboy). The grill has held-up pretty well over the years and it needs to used once in a while, along with the other grills/smokers.

A spatchcock chicken in an overnight kosher-salt/brown-sugar/spiced brine.

One rack of St. Louis and two racks of baby backs trimmed and cleaned.

Chicken rinsed, dried and back in the ice box to air dry while the ribs cook

Got a couple of bricks going in the chimney, using the Fatboy ash catcher to keep the burnt paper flying all over the backyard.

SL Rack rubbed with molasses and a KC rub.   BB back in the fridge for an hour or so while the SL Ribs start their cook.

Wish I could have a taste that looks so good.

I like your idea about adding brown sugar to your brine. That must add a certain sweetness and nice taste to the chicken. I know my wife likes to add brown sugar and cinnamon to a lot of her dishes that complement the flavors. Thanks for that tip.

The SL Ribs have been going for a little more than an hour, now it’s time to add the  baby backs to the smoker. The temp has been steady at 220-230. I decided to use the rib rack so everyone gets the same amount of heat.

I looked but wasn't able to find replacment parts for the fat boy. Lot's of weber ash catchers

Thanks Rad. Gotta link for the weber ones? I can only find ones that go on the kettle, not for the chimney starter like your fatboy does.

Hour three the chicken made its way to the party and the ribs are looking good. I pulled some of the tips to add to the beans. The Chicken is on the lower rack so it is going to catch-up pretty quickly.

I actually like cooking on my double-chef better than my WSM, it's just not made out of the quality materials :o

Rad, I don't know anybody that can pack more food on / or in a cooker than you can...AND cook it so good!!!

Food was really great. The chicken doesn’t look pretty but had a real nice smoke flavor. Ribs were very tender to the bone but not fall off the bone, which is the way like them. I’ve noticed that cooking corn in their husks adds such a nice flavor, no one added any butter or salt. Buddy from across the street come over and helped finish them off.

Yes, but I think he turned his into a pellet pooper that serves drinks and takes out the trash.  8)
