Australian lamb loin chops - marinated for about 2 hours with fresh rosemary, thyme from the garden, coarse salt, minced garlic ground in a mortar and pestle, then seared on hot cast iron. Served with thick skin baked potato seasoned only with butter, salt, and pepper. Made a sauce by melting butter in a hot pan, adding the marinade, and thickening with heavy cream. Very simple, but my sweetie loved it.

Other than perhaps adding a bit of fresh mint I can't think of a better way to season those lamb chops. What you used looks and sounds perfect! I love the sauce you made too.

I have never had lamb but seeing a lot of cooks lately with it. Need to get some and try it!! Yours looks perfect, bookmarked for a future cook!

One thing I would do differently the next time is to do it on an outdoor grill of some kind (probably the sear burner on the gasser). The reason is that these chops are like tiny T-bone steaks, and the bones on some of the chops prevented direct contact with the meat. Fortunately I was lucky that most of the chops turned out with a good crust
