Hello Everyone!
I am very pleased to be sitting here in your home! With a little effort on my part, I hope that I can make it feel like my home too.
I am an outdoor cooking nut. I have spent the better part of three decades exploring and camping in the mountains and deserts of California, Baja and Utah via my 4WD truck. I have been experimenting with and perfecting outdoor cooking techniques and recipes with my camping buddies on many types of heat sources including Weber BBQ's, Camp Chef propane stoves and of course, my favorite, the campfire.
Of course, I am also very comfortable cooking for my family and friends in my backyard. In this arena, the Weber 22" has always been king ever since I can remember. I just bought my fourth Weber (the "Gold" version and my first with the real simulated plastic handles). About a year and a half ago, probably due to a fifty-something crisis, I bought my first smoker, a Smokin-it Model #2. My usual M.O. is to throw away the instructions and learn by doing: Try something, fail, figure out what went wrong try it again. Well learning to smoke is a lot more complex then most other styles of cooking so I decided to check out the Smokin-it Forum. What I learned there in three hours would have taken me three years using my usual method!
They turned me on to the LTBBQ forum and so here I am, an old dog that wants to learn new tricks. I like using simple tools to make great gourmet meals in the outdoors so here is a sampling of my gear:
Weber 22" "Gold"
Smokin-it Model #2
Camp Chef Dual Burner Stove (30,000 BTU)
Assorted Dutch ovens and cast iron
Mojoe Griddle
Bayou Classic Deep Fat Turkey Fryer
F150 4x4 Crew Cab
Glad to be in your house!

The joy of cooking a great meal on your campfire is indescribable. It takes you back to our Neanderthal roots in addition to amazing your friends. Whose eye is that?

Greetings from Las Vegas.
OK, after much thought, I get it now. I thought that you were the only Vegan ever to join a BBQ forum. But after thinking about it, I realized that Las Vegan means "someone who lives in Las vegas".

Hi TMB:
Thanks for the welcome. Looks like you have some serious gear but I can't translate all the acronyms because, I am after all, a Newbie. In a couple of months, I'll know exactly what it means!

Hi Pam: That's a very intriguing photo. You seem to be staring at me right out of the computer. I'll have to remember to dress appropriately when I'm sitting here!

Your comment brought back fond old memories - did much the same in the early 1970s - 4x4-ing through Patton's old WWII proving grounds in the Borrego desert, explored the Dos Cabezas area just after hurricane Kathleen in '76, and loved seeing the old trestles and tunnels of the San Diego and Arizona Eastern after they abandoned the line due to the extensive damage done by Kathleen.
Welcome, Cam ;)

BINGO!!! I'm transplanted native of Louisiana from the swamps to the desert. :D

Welcome from South East Arkansas. Nothing beats an open fire cooking rig! I think you can light a grill fire, sit 10' from it and eat a store bought burger and it will make the burger taste better ;D
As far as the smoking goes, I'm still learning. The one thing I do know is, DO NOT over smoke the meat!!!!!! I like smoking meat the "low & slow" way.
Trust me..... You are on the BEST site around to talk to LOTS of good cooks for advice anything you are looking for. Good luck and welcome aboard!!!! :)
