Getting ready to pick up my new Shirley Fabrication RF smoker next week. It’s been weeks of anticipation and I can’t wait to lay eyes on this cooker in person. I will be making the drive down to AL to pick her up and meet the master himself……..Paul Shirley. This will be my first stickburner but I wanted to make sure I did it right. If anyone is even considering a custom built smoker, do yourself a favor and give Paul a call before you make a final decision. Paul and his son Tyler are great craftsmen and take an unbelievable amount of pride in their work.

So I made the 12 hour trip to Alabama to pick up my new smoker this week...........I couldn't be more pleased with what Shirley Fabrication built for me. This thing is an absolute tank!

That is very impressive. So are you using this for competition? Or are you going on the road selling smoked meat? I can't imagine something that size as a back yard smoker.

Believe or not this will mainly be for backyard use. :) ;D I have one comp scheduled in Sept.
I was originally thinking 48" but decided to go 24x60 in hopes of doing more comps in the future.

very nice smoker. I have looked at Shirley fabrication smokers. they are nice. keep us updated w/ photos. I got a question? why reverse flow smoker instead of a regular smoker (like a jambo)? it looks like it will be a lot of fun. 8)

The RF appealed to me because of the even temps across the cooker. Jambo makes a top notch traditional offset and is known for consistent temps as well but $$$$$$$$$
Shirley cookers can compete with any of the "big boys" and quite honestly, when doing my research, I couldn't find ANY dissatisfied customers of SF.

I don't know if that is true. when you buy logs do you have to buy special wood? you don't just go to the wood guy. he only has fire wood.

I got an RF that I built my self (you can't buy RF smokers in south africa ) , i found that the temp is more even than the offset on . i use only wood that is safe for smoking meat .like fruit trees or oak . i get the great results in this smoker . this smoker looks amazing .

I have been told by various manufacturers that reverse flow smokers are little more easy on the wood than traditional off-set smokers. Thinking about one for our new home in the South (when we finally settle).

Smoke - RF cookers are use a bit more fuel at the beginning because the RF plate is absorbing a lot of the heat and the hot air is not being released directly into the cooking chamber (short cooks are very fuel intense comparatively). Once the unit is up to temp, they are fairly consistent with traditional offset cookers of the same volume. Personally I like tuning plates, but I am a tinkerer.

Hey Chris what ever happened to that old one you found in the back forty ? Seem to remember you had something going on with an old cooker.
We brought it back to life and she went back into service and floats back and forth between 3 people. It is hard to keep the temp dialed in at 225 with it as well. Works great as a grill or hog roaster not so much as a smoker.
