After seeing Gene’s (Hikerman) post (http://www.letstalkbbq.com/index.php?topic=8799.0) on the bison steaks using M3 and WOW, I decided to see how that
combo works on a rump roast. I bought a 3.5 pound rump roast and injected it this morning with beef
broth and garlic powder. I refrigerated it for about 6 hours. I then coated it with EVOO and seasoned it
liberally with M3 and WOW.

It was put onto the Grid Iron using cherry pellets. I also have cherry pellets in the 6 inch tube smoker.
I plan on taking it to 135, wrap it in foil and let it rest for about an hour.

The roast is done. I smoked it at 185 until it reached an IT of 110 then kicked up the Grid Iron to 375.
I pulled it at 138.

I marinated some baby red potatoes in EVOO and a package of Lipton Onion mix for about an hour.
Sprayed some cooking spray on the foil and put the potato chunks on. I seasoned them lightly with Montreal
Steak seasoning. Put into a 350 oven for 30 minutes. I will then bumped the temp up to 400 to finish them.

After resting for about an hour the roast was sliced.

Plated with green beans and some Arby’s horsey sauce.

As the title says it was MAGIC! The combination of the M3 and WOW made this one super delicious roast.
Tee you need to work on this mixture as a combo as it really does work its magic, especially on this beef roast.
The potatoes were delicious too and very simple to make. I know I will be doing both the same way again.

Mike, I went with a 60/40 ratio. 60 percent M3, 40 percent WOW.

Looks fantastic! Only change I would make is to use straight horseradish. And thank goodness Lent is just about over--that means MORE red meat! Hallelujah! You guys were killing me with the posts of all the rib eyes, etc., for last night's dinner!
