Looking into a DB GMG, in my price range, and do own, and am "licensed" (LOL) to operate one said Professional Poly Science Sous Vide unit.
I love it, and hope to enlighten those who are truly interested in a perfectly cooked ...... really anything. I'm particularly interested in experimenting with low smoking a brisket, vac sealing, sous viding for ~ 50 hours or so, at 149 f, and finishing on the grill.

welcome from northern cali.  we got mad scientist here who use sous vide units.  would love to learn more about the process.  got any pictures.  we like pics.   8)

Heck - if you can cook on a hot rock, and share it with others...THIS is the place! If you look at our member count, then the page views per day, and the post count - it becomes quickly apparent that there must be something to this bunch of crazies :D :D :D

I have a Dorkfood DSV Sous Vide controller. I have a few Sous Vide cooks under my belt but still learning the ropes ;)

Grew up No Cali, lived in So Cali 11 years, I'm an old timer, and couldn't even show my Clapton avatar .... I'll get there. Pictures yes.

Welcome from the alien capital of the universe!   A CU grad, so will always have a big place in my heart for Boulder.   Some good times there at the Tulagi, The Sink and The Timber Tavern.   Think only The Sink is still there, so that dates me!   The campus had over 10,000 students the first year I was there, Boulder had under 20,000!    JUST under 20,000. Great times, great memories.

Don't take me wrong, BUT This Fat Boy would starve if I had to cold smoke a brisket for 2-3 hours then wait 50 hours for it to sit in water only to have to take it to a grill to finish it off!!  ???  When I know I can put a Brisket on the Dragon Lady and be eating hot out of the smoker Brisket in 7 hours!  8)
