Those are "short ribs"...Like you are a "short man" ( Guys - Jack is somewhere around 6-1/2 feet tall.... ;) )  SO...I think you should call those "Texas short ribs" - cause, we all know....everything is bigger in Texas ;D ;D ;D...

What temp water bath Jack? And how long will they be in for?

I find Short Ribs are really good at 135F for around 50 hours ;)

If beef short ribs weren't "blank " expensive they'd be "Natures Most Perfect Food"
Braised , served with mac & cheese it's a meal fit for a King 8)

those 12 ribs were $68  ???
That is over $5 dollars a rib, wow.  No wonder the wife doesn't bring short ribs home for me to cook.

WOW on the cook and the prices,no wonder I dont see them around here,we be po folks.Guess they sell well out in Malibu,LOL,I never saw meat prices so high before in my life as when we were camping out in the area.

Capt Jack:  What temperature do you set your oven roaster on?  They said to use High when using a slow cooker.

Always leave it on high. The Dorkfood DSV will act as the thermostat and pulse the power to the element so no need to leave it anywhere but in high.

Yes leave it at 450. The thermostat is not needed. The DSV is the thermostat.

when I found these long - short ribs in the butcher's case I was thrilled
I started pointing to the ones I wanted
then he asked me if I wanted them cut in half
I was aghast  ???
