First and foremost thanks for having me,
Hi my name is Nick and I’m a BBQaholic (official term). I’ve lived in the Pacific Northwest my entire life and recently moved to Eastern Oregon. I have never been able to wrap my head around the idea that barbecue has a season. It’s confusing to me because I do it year round in just about every kind of weather imaginable.
I prefer to barbecue on briquettes or with wood, but don’t mind cooking with a little gas. Half of my barbecue is propane and the other half is for cooking the old fashioned way. I just recently attached a smoke box to the side of my grill and am adjusting to it one fire at a time. I’m constantly trying to hone my skills and try new things. I love getting together with family and friends who share great food and stories as well as creating new stories and memories for generations to come.
I’ll barbecue just about anything, but it has been said my smoked chicken is legendary. I’m not sure if this is true or just some family and friends enjoying not having to cook their dinner. I currently have a couple of whole chickens in a bucket of brine and plan to smoke them tomorrow. Pictures to follow…

Welcome from the alien capital of the universe! Here in SE New Mexico there are VERY few times I will not grill or smoke something if that's what I (we) want to do. Have a covered patio, so grilling in the rain and/or snow is easier because of that. When the wind is blowing a gale, which it can certainly do here on the east side of the Southern Rockies, is the biggest thing that shuts me down. Makes it miserable because of the blowing dirt, usually, and makes it difficult to control the heat, or keep the burner going on my SRG. Have been known to build wind blocks from patio chairs, tables, etc. Don't laugh, it works! Surprisingly, chickens are one thing I haven't smoked (yet). And they are one of the easiest and fastest to smoke. Why do we do the things we do? I sometimes wonder. Enjoy this site, it's super!
