Quick pickled (kind of) okra
« Reply #-1 on: July 11, 2014, 11:53:20 PM »
I can only purchase frozen okra in my area, and have been enjoying grilling them for a while now.  The other day I finished a jar of pickled asparagus, and thought about recycling the pickle juice in the form of a pseudo-pickled jar of okra.  It turned out good, but was a little mushy.

Today I threw frozen okra on the grill to give them a little grill char, then placed them in the pickle jar, topping with pickle juice, red pepper flakes, and sliced pickled jalapeno.  They are spicy and hot just the way I like them, and the texture is much more crisp due to the inside of the pods not being thoroughly cooked.

Thanks Spuds, I just tasted one and it had wonderful spice due to the red pepper flakes, and the distinctive jalapeno flavor - even had a hint of grilled flavor.  They are crispy like the Texas brand you get in the small jars.  It remains to be seen how they will last.  One thing is that they are not hot canned, so these will not last that long, even in the fridge.

I love the pickled okra you purchase in the small jars, but it is over $5 a jar.  The best part is that frozen okra costs me only a bit over a dollar, and makes the equivalent of about 3 of the $5 jars worth of pickled okra, which is a huge savings.  3 Purchased jars would cost me about $16, and for a dollar and change, I can make the same with minimal effort.
