Philly cheese butt

Using TMB-style pork butt, we made sandwiches Philly style. 

Chopped up the meat and added white American cheese and a bit of Manchego for bite

That looks good! A big thing here in Philly is roast pork with broccoli rabe and sharp provolone.  Spinach can be substituted for broccoli rabe as it is sometimes hard to find good bunches and if you don't cook it right it is super bitter.

Broccoli Rabe: Trim the tough stalk ends. Boil or steam until almost tender then flash pan fry in olive oil and garlic to get color and finish cooking.

WOW, pz!!  Another good use for leftover PP.  I love a good Philly Cheese Steak, why not one made with PP.
