What do you think my first cook should be? I have to impress my wife! It should arrive on Friday so I am thinking on seasoning it with bacon. I have a brisket flat in the freezer but should I do something else?

My recommendation would be ribs.  My pellet grill is a Traeger Jr and the ribs I do on it got a thumbs up from LTBBQ rib guru "Sparky".  8)

Brisket is not a easy first cook to get right. Especially if it is just a flat.

How about a bacon wrapped pork tenderloin? Now that sounds good!

Seasoning with bacon is always a good idea and remember, its perfectly okay to eat that bacon  ::)

As to a first cook, take it easy.  New cookers have to be learned so don't try anything fancy or too far out of your own range.  Do what is simple and what you have had success with before.  Be ready for more precise temperature control and all the other characteristics that will change.  Maybe a small pork butt?
