I have this showing up on Monday.....and a case of gas.  :)

Really want to try some precision browning of some of the sous vide meats. Just another tool in the tool box.

People say you can get an off flavor from propane, so I went with butane. How does MAPP compare?

At the temperature that MAPP gas burns at there is no propane odor left over from my experience.

The torch you bought has much more temp control for delicate items like creme brûlée. When I sear something I like the brute force of MAPP gas.

This is a great topic, and one I've been maning to ask about.  According to the Department of Labor MSDS for MAPP gas, the combustion byproducts are known to cause cancer, birth defects, and other reproductive harm. http://txisupply.com/wp-content/uploads/2011/07/Mapp_Gas_MSDS.pdf

Anyone know about the true safety of any of these kinds of flame tools?

pz any byproducts of combustion can be hazardous. Those byproducts are due to incomplete combustion. As long as you have a proper mix of air to gas ratio the burn is complete so those byproducts are limited.

Any combustible gas without the proper air and fuel mixture can create aldehydes that can be toxic and dangerous.

In other words I am not too concerned about it as long as my flame is properly adjusted ;)

come close to use it for browning my cooked meat. I do use it extensively when lighting my
Amazen tube smoker, etc. Works great!  ;)

Thanks for the clarification, muebe - I've always wondered about what one is blasting the food with, and what in the food might be converted into something carcinogenic (much like burning food on a grill).  So far we've only done creme brulee with a torch, and I was not sure if the gasses created for foods were different than the industrial gasses

That's the torch I was looking at to light my amps.

I think I am a tad scared about live fire in my kitchen!  ;) But the main reason is my SRG is awesome
when I brown or sear and it is my go to machine!

Now that makes sense to me!  I have a spot in my kitchen that is all stainless that I plan on using.....I have your same concern.

If you use the pre-sear method (pan searing) - - it could make torch searing much easier and take much less time.

While watching them use a torch, I was thinking "how long will it take to sear four steaks with this torch?"
