Need some advice

I am spending a few months in Florida. I have a motorhome and brought smoker along.
I want to cure and smoke some pork belly bacon.  Refrigerator in MH not big enough to
Hold belly being cured. I ended up with two sides total of 22 lbs.
Wondering if a good cooler could work or if I should purchase a small ref. just for curing?

If you used a cooler you would have to monitor the temperature and be religious about changing/adding ice to keep the temperature down around 37°.  I personally wouldn't do it.

The question becomes would you use a refrigerator on an ongoing basis for more curing in the future?  If so, then yes it makes sense to get one.

Three years ago my wife got tired of my sausages, hams, etc. taking up space in the fridge and made me get my own. I picked up a used one for $50 in great shape and now I can't imagine not having one just for curing.


Think about it this way: It would only take your pork bellies spoiling one time to justify the cost of buying a used refrigerator.

I'd go with another fridge too, I have a second one in my RV, not for curing meats though, it's a beer fridge because the RV fridge ain't big enough for food and an ample supply of beer.

Got the refrigerator today. Meat put into cure.  Ref will fit into rear storage alongside the smoker.

But seriously, the only thing that I store long term in a cooler(dore) is my stash of cigars.

Did you travel south on I-75?

When you head home will you travel I-75.  Here we are, right in the middle of GA just minutes off I-75 waiting for folks to drop in for a cookout.
Ask around - we can provide references if you want 'em.

That's the advice I'd give.

Great idea, my rig is a 38' fifth wheel toy hauler, in the back I put the Harley, outdoor cooking gear, spare fridge and the old lady when she don't shut up. ;)
