Rib Eye SV experience
« Reply #-1 on: January 18, 2015, 08:37:07 PM »
Had no plans for the SV so I decided to try a rib eye. I normally dry brine but this was just a trial.
Seasoned with salt and pepper vacuum seal and took a dive in 135 hot tub for 3 hours (I got caught up with Green Bay Packers fail)

Seared in cast iron

Fantastic results. Looking forward to a proper rib eye cook.

Looks proper to me. I like searing on screaming hot cast iron after sv..did it wth a prime rib for new years and some pork chops. I must be getting old..not wanting to stand out in the cold anymore.  geezz.  Pam  .☆´¯`•.¸¸. ི♥ྀ.

Fantastic! Just FYI, let them cool off slightly, if you're going to pan sear them, to prevent overshooting your target serving temp.

3 hours to cook? How long would it have taken to just get a cast iron pan screaming hot and cook a steak in it till it was seared on the outside and still rare and juicy on the inside? It does look good though.

3 hours only because I was watching the game. Keep in mind though that SV is more convenience with perfect results that anything.
Sure I could slap that meat on the skillet but here it was perfectly done while I watched the Packers fail. Coming from a Cowboys fan that's a win win. LOL

Well a few hours after my wife salted and pepperd the steaks she asked me if they were to be put in the freezer! She did,.  We are 45 mins awAY AT this time. ugggggg  I even told her the salt would move the liquid in the meat! Thawing now.
