Found some little grass-fed lamb chops at Safeway last night, and decided to try them in the cast iron.
Holy Moly, the crust on these was just to die for!! I wasn't feeling very creative, and since this was a totally last minute decision, I just turned the burner onto med-high, put in some coconut oil, and threw the chops on when it was hot. Sprinkled them with a little salt, seared for a few minutes on each side, then kept flipping them until the IT hit 135.
I think next time I'll plan ahead a bit, and smoke them for awhile and reverse sear them. The outer layer was a little too done by the time the inside was up to temp.
But boy oh boy was that a tasty dinner!! I And don't tell
you know who, but I had a little bowl of snap peas on the side too.
I did sprinkle a few bites with some porcini mushroom powder mix which was a nice addition I might include next time I do these.
