The raccoon road kill in NC really doesn't need to be cooked SV style.  It is usually pretty well tenderized after an 18 wheeler or two runs over it.

Heat oven to high. Place dressed coon in pan with cover and a little water. ( A diced onion never hurt)..  Into the oven and in a few minutes turn oven off and leave overnight.
 Next morning remove bones and mix in you favorite BBQ sauce. Warm that up and let cool , then refrigerate for the day or better yet until the next day.
 Warm it up and make some sliders....

I think that market was close to "China Town". They have some crazy little businesses tucked away around there. My Dad used to walk that beat when he was a rookie with the County Sheriffs Dept.

I remember when I was teaching in Eastern Virginia (right above Jamestown), several of my students were avid coon hunters.  They even had custom built dogboxes to fit into the beds of their pickups. 

To this day I remember the slogan one of them stenciled on the back of his truck . . . . "When the Tailgate Drops, the Bulls*** Stops!"
