Try bringing the water to a gentle simmer from cold, instead of gentle simmer from boiling.

Good idea, but still to hot to reheat rare cooked beef. ;)

Paul getting back on the subject of which vacuum sealer.
What do you want it for.
Sealers are like cameras , the best sealer is the one in your hand ( or on your countertop).
Since I have a small footprint almost attractive Foodsaver my wife lets me keep it out, when I had one in a cabinet I rarely used & now use the convenient one a lot.
Just like a camera their are some things the small foodsaver just won't do!
When we make sausage in bulk we drag out my buddies Weston because after 4-5 bags mine gives up the ghost & his will go all day,however he doesn't drag his out for small jobs, just too much trouble.
I would like both but for my use the small one is best.

Thanks for the replies. I basically want to put away food that I'm not going to eat all of or just make too much on purpose for putting away. I can imagine a lot of pork butt going in the freezer. Maybe 4 serving size or so.

Paul, I do not want to discourage you....but please allow me to discourage you from buying that.... :D

1. You will be limited to specific sized bags. They are more expensive.

2. The vacuum level that can produce is less than a regular vacuum sealer

There is a reason it is much cheaper ;)

I bet those specialized bags will kill you overtime. The cheapest isn't always the least expensive. Words I live by

That removes excess from the bag but that is not a vac sealer nor does it replace one.

Going for cheap isn't saving at all, cheap things are very expensive.
By quality and you'll save a bunch.

Sweetie uses the Food Saver V3460 upright model and vac seals soup, black eye peas, chili, and everything one can think of and never had a problem with liquid being suck in.

She vac packs veggies in bags sized for 4 meals and meats sized for two meals. For smoked spare ribs we slice in half and bag. 
By the end of summer she will have about 50 each bags of greens, black eyes peas and field peas vac bagged and frozen from her garden.

To reheat, for instantaneous Smoked Boston Butt, we put the bag unopened in just simmering water for 20 to 30 minutes and it comes out like just came off the smoker.

Key is to reheating and flavor is simmering not boiling water and not to open the bag until done.

I just got mine (Foodsaver) this past Christmas and have not tried soup.  I saw that it had a setting for dry and wet, but I did not realize that it would do actual liquids.

Be sure to read the fine print in your owners guide/manual....If you suck liquids into the vacuum pick up tube - it goes straight to the pump, and will cause you to have a bad day. ;) It kills your vacuum sealer. Look to see where your vacuum port/pick up tube is located. If it is ABOVE the removable tray in your vacuum sealer - it is much safer to attempt vac sealing soups or foods with a lot of liquid content.

Some sealers have a built in tray that is not removable, and others are removable. The ones that have a removable tray - typically have the vac pick up tube above where liquid can be sucked into the pumps. But, it is cheap insurance to look and be certain....
