Sous vide experiment ~ brisket flat

Sous vide experiment, brisket flat at 135 for 48 hours. Chilled, then smoked with pecan, then assaulted over flames. You tell me.....

What a great looking brisket!!  I'll bet it was really tender after a 48 hour swim.  That is making me hungry!

This is the way to go with brisket flat.
Let's be honest, no matter how great one is at smoking a brisket, the flat is a mood killer unless you go the SRF $150 brisket.

That I just plain gorgeous - bookmarked. About how long did you smoke it after the spa?

I threw it in the freezer so I could get more time smoking. Took about an hour and a half to get back up to 129 degrees. I didn't want to go past 135.
