Oh sweet holy moly that bacon jam looks good!!!!!

I was so excited to come back from our UK trip and ask you all if anyone knew about British Style bacon, since I was a little befuddled with what cut of meat it is (it looked like someone glued a bit of Canadian Bacon to a couple inch strip of 'real' bacon).  Then I rather accidentally came across a nice little article about it, and thought I'd share on this thread!

http://www.thepauperedchef.com/2010/04/a-guide-to-bacon-styles-and-how-to-make-proper-british-rashers.html

Here is one picture of the typical breakfast served at the B&Bs (Minus the baked beans they usually serve):

Some black pudding, poached eggs on top of a little potato pancake thing, grilled tomato, local pork sausage,, and the 'rashers' of bacon.  We got so spoiled having this kind of thing for breakfast every morning!   I tried to put in my order with James this morning, and he roundly refused to indulge my spoiled rotten butt.  :)

Check out my post about some homemade Bourbon Bacon Marmalade I made some time ago.  I have made this several times.  It is definitely worth making.

Good info on the English bacon! I tried the bacon jam once but didn't care for it, too sweet for me. If you can find some smoked jowel bacon Kat try it, to me it is the best!!! Don

Reminds me of the old joke that ends, "You don't want to eat a great pig like that all at once."
