Rouses smoker

I saw this at Rouses last night. Wish I had a better look. It's there fairly often and I know the guy who starts it so he is going to call next time and let me watch them getting it going.
It was running at 300 degrees. He said that is its sweet spot and will sit at that all day once it's going.
I like the air vent they put on the back near the fire.
If you notice the small tank at the exhaust, I found that pretty interesting because I expected it to be hotter but it was running at 200.
This is a 1000 gallon tank I'm pretty sure and its sitting on a 16 foot trailer.
