Weber Kettle guy here who just purchased a PBC. I've been avoiding buying anything other than my kettle fearing I would become obsessed with with using it, researching new recipes/techniques and perfecting my craft.  I have small children and can't spend a whole lot of time cooking.

My vision for the PBC is learn how to get it started and toss some very simply rubbed ribs, chickens and butts out there and come back to check hours later.  If I can truly get a basket of coals set in less than 30 min and then hang meat and forget about it for a few hours it will be perfect.

I eat well now with quick cook steaks, chops and seafood on my kettle but this would give me more options.

I am going to do my first cook with the lighter fluid method and if I cant taste the fluid and if it works well I will stick with it for a while.  If not I'll play around with my chimney.

Does anyone have a pic or description of what the lit basket should look like before hanging meat?   I'm nervous about just using time b/c sometimes my coals are ready quicker then others depending on weather, how much newspaper I use, etc.

Welcome from Morganton, NC.  I am guessing that you are in Durham, NC.  Correct me if I'm wrong.  My son and family live in Durham, so I get over there on occasion.

When you have white ash on all the coals, that is when I start cooking on my PBC.  I use the lighter fluid method with mine and as long as the coals show that white ash, I have never had a taste problem.  Good luck.  Keep us all posted with lots of pictures and descriptions of your cooks.

Welcome from SE Alabama. You are going to love that PBC...I have had mine for awhile now.It is a set and forget once you get the hang of it. I have tried the chimney method,but have had more success with lighter fluid. Just make sure you get a good hot fire to start. Just watch the videos from PBC if you haven't already.

If you use good starter (name brand like Kingsford or Gulf) and wait the obligatory twenty minutes until the coals are ready you'll never get the dreaded "lighter fluid taste".  It is much easier and less trouble than fooling around with a chimney.

Bad flavors like the lighter fluid effect or "creosote" come from mismanagement of white smoke, primarily.  Bad experiences abound here from those who tried smoke wood additions to their PBC's and went overboard -- you don't need much, if any.  Sneak up on it.

Welcome from Philly Burbs and fellow PBC owner. 

I use chimney 10-15 minutes until flames shooting out of top then dump and leave lid off for 10 minutes while I get the meat all hooked up before hanging. Hang it and forget it for a few hours (or 75 minutes for halved chicken).

don't forget to line a pc of hd foil in the bottom of the PBC.............makes clean up a snap

avoid using wood chunks or chips your first couple of cooks......ya just might find the "grease fog" flavor from the briqs will be all ya need
