Pork Temple Meat
« Reply #-1 on: October 23, 2015, 03:56:28 PM »
I was perusing the meat case at the best new grocery store to hit the Twin Cities (Hy-Vee) and I saw Pork Temple Meat.  I had never heard of it.

In talking with the meat department manager, he had never heard of it either.  But customers were asking for it.

So I bought two pounds.  No idea what I am gonna do with it.

Anybody with any experience with this?

Awesome stuff!  On whole hog cooks a pork cheek is a very tender juicy tasty tidbit for the cook!
Saute it slow with onions and then wilt in some baby spinach(Any greens would do).  Careful not to overcook it.
Make some corn bread to go along with it.

I've seen a couple of recipes that compare temple meat (coming from the temple or upper head of the pig) vs. cheek or jowl. These were used in making cutlets and most agreed that the temple meat was preferable but all excellent. I have been unable to find a chart that shows where the meat cmes from exactly.
