Good Morning from NoCo

Good morning from  northern Colorado! I found the forum while doing Internet research looking for a new smoker. I stumbled on one of the posts about the PBC, and was intrigued. I think I read nearly every post in the PBC forum to understand the experiences of actual users before I made the decision to actually buy one. I tend to shop for months before committing to a certain item, so this really helped.

I bought my PBC in early October, and have done several chickens, a couple racks of ribs, a few tri-tips, and just this weekend, my tester turkey for thanksgiving. I love my PBC, and the knowledge and advice I've gotten via the forum has been instrumental.

I'm looking forward to learning more and posting some tasty cooks. This is my "tester" PBC turkey from Sunday; oiled, rubbed, and hung. Virtually no prep, and the results were even better than my typically awesome "Good Eats" turkey!

No wood at all. I just oiled it and used the Pit Barrel Cooker All-Purpose rub. I hung it using four hooks through the back and just let the PBC do its thing. Surprisingly, it was ready to go in about 3:15 for a 14lb. bird. No cavity aromatics and no brine, I just wanted to see how a simple, no stress turkey would come off, and I was really pleased.

For T-Day, I might butterball it, but the white meat was already pretty darn good.
