They do look good! I love BQ wings. And sometimes I crave deep fried chicken wings....SO-
Ever wonder what would happen if - after they are cooked Sous Vide, then you:
1. Place them on a wire rack above a cookie sheet - then into the fridge for 24 hours.
2. Now, that much of the moisture in the skin has evaporated ( but the chicken will remain moist...) LIGHTLY spritz them with oil.
3. dredge them thru a 50-50% mix of corn starch and 00 grade flour ( or cake flour )
4. Now - grill them.
HINT: They will be crispy as if they were deep fried....
