Paneed Beef Round

Yesterday afternoon I got to take out a little aggression on some thin cut beef rounds. These were already cut thin but after seasoning them with just sea salt, black pepper and Italian seasoning I placed them between two sheets of plastic wrap and pounded them even thinner and really embedding the seasoning into them more. Then a light dredge in seasoned flour, a dip into an egg wash and then coated with Italian bread crumbs they were ready to cook.

 

After a quick pan frying olive oil and butter they were done and smelled awesome. No pictures of that as I was getting the rest of the meal ready so we could eat and scoot out to a meeting we had to go to.

Fast forward to the plating and yeah, I kinda crowded my plate with the paneed beef, green beans, quinoa and grain salad and broccolli cheddar rice. The meat came out fork tender and delicious. Mmm... Mmmmmmmm.............!

Oh, yesterday morning I whipped up a lil banana cake with a Creme De Banana glaze to bring to the meeting for dessert.

I forgot to mention I use cube steak for my breaded steak.  I find it's cheaper , less $$$$  ;)
