Leftover Chicken and Pasta

Night before last I grill roasted a big chicken that having only three eating weren't able to finish it. Last night was breakfast for dinner so we had a good half of a chicken left. I decided to make a pasta dish with the chicken as a side.

This was one of those one pan pasta dishes that I put my own spin on. Mushrooms, squash, onions, grape tomatoes, a sliced jalapeno pepper, basil and garlic. I'd never done this before but felt like it would make for a nice dinner.



Done and ready to eat. Only needed to add some grated parmesan and romano cheese.



Time to eat! Got a lil warm  buttered Italian twist bread too!

Now that is what i'm talking about. when I make pasta I add all kinds of vegies, turns out great.
